Located in the Simbruini Mountains’ Regional Nature Park, this village is the second highest in the Province of Rome after Guadagnolo.
It has been established that the land on which today’s village stands was the property of Subiaco Monastery from 776, but the village itself was established in 883 AD.
In 1334 the Monaldeschi family constructed a Castle here, rebuilt in 1513 by Pompeo Colonna, Abbot of Subiaco.
In the nineteenth century, Cervara was a popular place for holidays and thanks to its beautiful countryside, charming women and fascinating customs and traditions it has been an ideal subject for Italian and international artists. Some of these artists have left traces of their stay in the area, such as sculptures, frescoes, murals and poetry to be found in the old houses and squares.

Food and wine
Cervara’s culinary specialities include: fettuccine with truffles, porcini mushrooms and mutton, gnocchi, polenta and strozzapreti pasta. Barbecued meat from here is particularly tasty, as is the locally produced ricotta cheese and the roasted pecorino cheese.
